Wild Plum Jelly

I forage these wild plums for their super bright and intense flavor. They taste like a very delicious plum, but TART! I infuse the juice of the plums with tea from a very good friend of mine, Rachel from Well Rooted Teas. I use her Bee Well blend that perfumes the jelly with anise hyssop and elderflower and calendula. It’s an unexpected and happy summer flavor that can be used in glazes, stirred into homemade ice cream, used as a sweetener in salad dressing - get creative with this one!
